  • Four medium-sized yellow and green zucchini
  • 4 minced garlic cloves
  • 60ml, or 1/4 cup, lemon juice; additional for serving
  • Two tablespoons of optional low-sodium soy sauce
  • 60 milliliters, or 1/4 cup Olive Oil
  • One tablespoon of butter without salt
  • Salt and freshly ground black pepper
  • Two tsp finely chopped fresh parsley

SAUTEED ZUCCHINI RECIPE

Here the combo of green zucchini and sightly sweet yellow zucchini squash makes for a balanced side dish that everyone will love, even as a simple yet elegant appetizer.

DIRECTIONS

  1. To prepare the recipe for sautéed zucchini: After giving the zucchini a quick rinse in cold water and patting it dry, cut it into thin lengthwise slices using a sharp knife, vegetable peeler, or mandoline. Olive oil, lemon juice, soy sauce, salt, and pepper (to taste) should be drizzled over the sliced zucchini in a shallow dish. Allow the flavors to seep in for 15 to 30 minutes.
  2. In a large skillet set over medium-low heat, melt 1 tablespoon of butter. Dough should be fried for one minute or until aromatic. Take care to prevent burning the garlic. Place aside on a little dish.
  3. After draining the zucchini slices from the marinade, place them in the same skillet over medium-low heat. Sauté the zucchini for 2 to 3 minutes on each side, or until browned but not burned. each side for three minutes.
