Garlic Butter Chicken Meatballs over Cauliflower Rice for Meal Prep – Delicious, juicy, and cheesy! Cheese, spices, garlic, and ground chicken are all combined to make these meal prep chicken meatballs. For the perfect meal prep lunch, try these simple chicken meatballs with steamed cauliflower rice that are low in carbohydrates, gluten-free, paleo, and keto. Have fun!

INGREDIENTS LIST FOR THE MEAL PREP GARLIC BUTTER CHICKEN MEATBALLS
- 1 pound (450 grams) of ground turkey or chicken
- Half a cup of your preferred shredded cheese, such as provolone, cheddar, or mozzarella
- two minced and four grated garlic cloves
- One tsp of Italian spice
- Optional: 1/2 teaspoon red crushed chili pepper flakes
- One optional crushed bouillon cube
- Half a cup of chicken broth
- To taste, add salt and freshly cracked black pepper.
- Half a cup of freshly chopped cilantro or parsley
- Three tablespoons of butter, separated
- half a lemon’s juice
- One tablespoon of your preferred hot sauce (we used Sriracha)
- One medium-sized head of grated cauliflower (or a packet of riced cauliflower)





DIRECTIONS
- To prepare the meal for the chicken meatballs: Use a food processor or large grater to make the cauliflower rice. Place into a shallow dish, add 1/2 cup water, and cook for 4 minutes in the microwave while covered.
- Meanwhile, mix the ground chicken, cheese, chopped parsley (or cilantro), grated garlic, Italian seasoning, crushed bouillon cube, and black pepper in a big bowl. Mix thoroughly with a fork or your hands to create medium-sized balls. Place in a platter and reserve.
- In a large skillet set over medium-low heat, melt two tablespoons of butter. The chicken meatballs should be cooked through and browned after 8 to 10 minutes of cooking on each side. Baste the meatballs with the mixture of butter and liquids as they cook. Transfer to a sanitized platter and reserve.
- Melt the last tablespoon of butter in the same skillet and add the spicy sauce, lemon juice, chicken stock, minced garlic, parsley, and red pepper flakes (if desired). Cook, stirring frequently, for 3 or 4 minutes, or until the sauce has somewhat reduced. If desired, add additional cilantro or parsley as a garnish and adjust the taste with salt and pepper.
- Sort the cauliflower rice into containers for meal prep. After that, add chicken meatballs on top and decorate with lemon slices. Spoon a small amount of the sauce over the meatballs and cauliflower rice, or reserve it in smaller jars. When it’s time to eat, quickly reheat your meal prep of chicken meatballs in the microwave.
