Creamy Chicken Soup in the Instant Pot: delicious, reassuring, and incredibly creamy. There should be a warning label on this simple Instant Pot chicken soup: DELISH! Made with chicken, cream, cream cheese, sun-dried tomatoes, bell pepper, garlic, chicken stock, and Mexican seasoning spices, it may be prepared in 25 minutes or less. We promise that everybody will beg for more. This version can be simply converted to a standard pot or even a slow cooker; it is produced in an electric pressure cooker.

INGREDIENTS LIST FOR THE INSTANT POT CREAMY CHICKEN SOUP

  • One pound (450g) of skinless, boneless chicken breast
  • One tiny jar (220g) sun-dried tomatoes with their oil removed
  • One spoonful of oil
  • One medium onion, finely sliced
  • one tablespoon of finely chopped garlic
  • One sliced red bell pepper
  • One tsp cumin powder
  • One tsp of dehydrated oregano
  • One tsp of optional chipotle or cayenne chili powder
  • One tsp of paprika
  • A cup and a half (375 ml) of chicken stock
  • one cup of cream half a cup of cream cheese
  • One cup of cheddar cheese, shredded
  • To taste, add salt and freshly cracked pepper.
  • Garnish with fresh cilantro leaves.

DIRECTIONS

  1. To make this recipe for creamy chicken soup in the Instant Pot: Press the sauté button on your Instant Pot. Add the chopped onion and garlic to the heated oil in the insert’s bottom and swirl for a few minutes.
  2. Include the chicken breast, bell pepper, oregano, cumin, paprika, sun-dried tomatoes, chili powder, and chicken stock. After giving the Instant Pot a little swirl, replace the lid. Put the timer on high pressure for 15 minutes. Release the pressure by carefully turning the valve to “venting” once the timer whistles.
  3. Take out of the Instant Pot and place the chicken breast on a chopping board. Using two forks, shred the cooked chicken breast and then put it back in the pot.
  4. Add the cream, cheddar, and cream cheese. To heat the chicken soup, put the Instant Pot on saute mode and stir until the cream and cheese are melted and the soup is smooth. Pour the chicken soup into bowls, add a little more salt and pepper for flavor, and top with fresh cilantro. Have fun!
