INGREDIENTS LIST FOR INSTANT POT CRACK CHICKEN SPINACH SOUP 

  • 2 lbs (900g) chicken breasts (boneless and skinless)
  • 12 oz (340g) of cream cheese (a block and a half)
  • 1 1/2 cups shredded Cheddar Cheese
  • 1 1/2 cup to 2 cups bone broth or water
  • 2 cups baby Spinach
  • One 1-oz packet of Dry Ranch Seasoning mix (or make your own version – see note)
  • 8 oz (220g) bacon crumbles

DIRECTIONS

  1. To create Instant Pot chicken soup, fill the bottom of your Instant Pot or pressure cooker with 1 1/2 to 2 cups of liquid (bone broth or water), depending on the consistency you want.
  2. Fill the insert with the chicken. Cut the blocks of cream cheese into large cubes for preparation, then place them on top of the chicken breasts with the seasonings and cheddar cheese. For 20 minutes, place the pressure cooker on high.
  3. Do a fast release after the allotted time has passed. Using two forks, carefully take the chicken from the Instant Pot and shred it onto a platter.
  4. Place the chicken shreds back into the Instant Pot. Add the bacon and mix in the spinach.crumbles. Once the sauce is smooth and the spinach has just wilted, give it a quick swirl and reheat. The sauce will thicken if the ingredients are let to sit for a short while. Enjoy the warm Instant Pot crack chicken soup!

TIPS FOR THE INSTANT POT CRACK CHICKEN SOUP RECIPE

  • To make the crack chicken soup creamier or more liquid, you can adjust the amount of liquid used. We use one and a half to two cups of liquid. You might need to add more liquid to a large Instant Pot or just double the batch.
  • If preferred, garnish the Instant Pot chicken soup with additional crumbled bacon!
  • Be aware that many Dry Ranch Seasoning packages may include sugar if you’re following a strict Keto diet. To create your own blend, mix together dry buttermilk powder, ground black pepper, garlic powder, onion powder, dried chives, and dried parsley and dill.
  • Take it easy on the salt; the ranch seasoning blend, bacon, and cream cheese are salty enough as is.

CAN WE USE OTHER CUTS OF CHICKEN FOR THE SOUP?

You can use skinless, boneless chicken thighs instead of chicken breasts for this Instant Pot chicken soup. They are cheap and flavorful, but they tend to render more fat.

HOW AND HOW LONG TO STORE THE INSTANT POT CRACK CHICKEN SOUP?

This Instant Pot crack chicken soup keeps well in the refrigerator for up to 3 days in an airtight container. Reheat gently on the stove with a few drops of water to loosen the soup. You can also freeze the soup for up to one month.
