This is an excellent low-carb, paleo, gluten-free, and keto supper option that the whole family will enjoy.

INGREDIENTS LIST FOR THE HAMBURGER BEEF SOUP

  • 450g/1 pound of lean ground beef
    One tablespoon of olive oil
    1/2 cup finely chopped onions
    Two celery stalks, thinly cut
    3 garlic cloves, cut in half
    To taste, add salt and freshly cracked pepper.
    Diced fresh tomatoes or a 15-oz (425g) can of diced tomatoes (dry well first)
    One tomato sauce can, 8 oz. (225 g).
    One tsp of Italian spice
    Five cups (1 1/4 l) beef stock; half a cup chopped fresh or frozen green beans
    Two teaspoons of freshly chopped parsley, if desiredAs a garnish, shred cheese (we used sharp cheddar).

DIRECTIONS

  1. To prepare the recipe for hamburger meat soup: In a large pot set over medium-high heat, warm the olive oil. Add the celery and onion to the saucepan. Simmer for 5 to 6 minutes, or until tender.

After adding the ground beef to the pot, taste and add salt and pepper as needed.

  1. Cook until the ground beef is browned and mostly done, breaking it up with a spoon as you go. For an additional 30 seconds, add the garlic and cook.
  2. Fill the saucepan with the diced tomatoes, tomato sauce, beef stock, and Italian spice. Simmer.
  3. Simmer for twenty to thirty minutes. If necessary, add a little salt and pepper after tasting.
  4. Add the green beans and simmer for an additional five to ten minutes. Add cheese and parsley as garnish.and promptly serve the beef hamburger soup, garnished with additional shredded cheese. Have fun!

TIPS FOR THE HAMBURGER BEEF SOUP {LOW CARB / KETO}

  • We recommend you use low-sodium beef broth for the soup. If you used regular beef broth, you shouldn’t need to add much salt at the end.
  • We use extra lean (95% lean) ground beef so we don’t find it necessary to discard any of the fat. If you use regular ground beef, you can omit the olive oil to brown the meat. Otherwise, the soup might end up greasy.

HOW TO MAKE THIS HAMBURGER BEEF SOUP IN THE INSTANT POT

You can make this beef soup in your Instant pot if you like. Follow the same steps for browning beef then cook 10 minutes in stew mode with the green beans, or add the green beans at the end and reheat 5 minutes.

HOW AND HOW LONG TO STORE THE HAMBURGER BEEF SOUP

This beef soup keeps for up to 2 days in the refrigerator in an airtight container. You can also freeze it and keep it for one or two months. Re-heat on the stovetop adding water or beef broth if necessary.
