INGREDIENTS LIST FOR THE FRENCH ONION CHICKEN CASSEROLE
- Three skinless, boneless chicken breasts, sliced horizontally if excessively thick
- One or two tsp powdered garlic
- One tsp of dehydrated oregano
- Optional: red crushed chili pepper flakes
- A dash of salt and some recently cracked pepper
- One cup of shredded Gruyere or mozzarella cheese
- Twice as much unsalted butter
- Five big onions, cut thinly
- three minced garlic cloves
- One-fourth to one-half cup chicken broth
- Chopped parsley fresh for garnish

DIRECTIONS
- Prepare the chicken dish with French onions: Set oven temperature to 400°F, or 200°C. Grease a 9-by-12-inch baking dish lightly and keep it aside.
- In a big skillet over medium-high heat, melt butter. Season with salt and pepper and add onions. Cook until tender, 5 to 8 minutes.
- Lower the heat to medium and cook the onions for about 15 minutes, stirring from time to time, until they are caramelized. If skillet becomes too dry, add 1/4 cup of broth to deglaze and stir until onions are browned.
- Add the freshly minced garlic and simmer for approximately a minute, or until fragrant. After turning off the heat, let it cool a little.
- Use oregano, garlic powder, salt, pepper, and crushed chili pepper flakes to season chicken breasts. Since cheese and French onions are already salty, go light on the salt. Inside the baking dish, arrange the chicken breasts.
- Spoon a little bit of caramelized onion over each chicken breast. Top with shredded cheese and bake for 20 to 25 minutes (or longer, depending on how thick your chicken breasts are), or until the cheese is bubbling and the chicken is thoroughly cooked. Next, broil the cheese for two minutes to make it crispier. Serve the French onion chicken dish right away with cauliflower rice or steamed veggies after adding some freshly chopped parsley as a garnish. Have fun!

TIPS FOR THE FRENCH ONION CHICKEN CASSEROLE RECIPE
- The caramelized onion can be made ahead of time, and the chicken casserole can be assembled right before baking.
To deglaze the pan, you can add some flavor to the french onion by adding a small amount of white wine, sherry, or balsamic vinegar.
The thickness of your chicken breasts will determine how long they take to cook. If they are excessively thick, cut them in half horizontally. To bring the chicken breasts to the same thickness, you can also pound them (gently!).
Since cheese and French onions are already salted, go light on the salt. The salt would dominate the flavor of the French onion chicken dish.
