One tsp of Italian spice
1/4 tspn powdered onion

One-fourth teaspoon smoky paprika
Optional: red chilli pepper flakes
half a lemon’s juice
One big broccoli head that has been broken into florets
Chopped parsley fresh for garnish

HOW TO BAKE SHRIMP IN FOIL PACKETS

This recipe for oven-baked prawns is really simple to prepare. Just folding the foil packages is the most difficult task! To make this roasted prawns and broccoli, follow these tips:

Use larger shrimp: Since 16–20 shrimp are meatier and more juicy, we use them. Keep in mind that the size of your prawns will affect how long they cook.
If you prefer your broccoli especially soft, blanch the florets for three minutes in boiling, salted water, and then rinse them in freezing water to preserve their colour. After that, toss the shrimp-filled foil packs.

To allow for proper heat distribution, do not seal the packs tightly around the prawns and broccoli.
When the baking time is almost up, feel free to crisp up the prawns and vegetables under the grill. Carefully open the foil packages, then place them under the grill for a minute or two.

FRESH OR FROZEN SHRIMP FOR BAKING?

Purchase frozen or fresh prawns, the choice is yours. Frozen prawns is a great option because it retains nutrition. The majority of the time, “fresh prawns” that are sold in stores are actually frozen and then thawed. Keep in mind that prawns that are caught in the wild generally taste better. To reduce prep time, purchase prawns that have already been washed, deveined, and shelled. Shrimp with or without tails can be used.

BAKED SHRIMP SEASONING

Simple herbs and spices are used in this recipe for oven-baked prawns. These prawns are made much better by the addition of garlic, butter, lemon and spices. We added the following to our salt and pepper mix:

Unsalted butter is preferable since it allows you to more precisely adjust the seasoning for the prawns.
Garlic: For that amazing flavour, use a tonne of fresh garlic!
Italian seasoning: The combination of basil, thyme, rosemary and oregano gives the baked prawns a rich flavour.

Powdered onion: To go well with garlic.
The smoky flavour of smoked paprika balances out the blandness of broccoli.
Fresh lemon juice: For that zesty, reviving flavour.
For that perfect spicy sensation, try red chilli pepper flakes. But it’s entirely optional.
Fresh parsley: After the cooked prawns are taken out of the oven, parsley gives them a more youthful flavour.
This recipe for healthy baked prawns can be customised by adding five spices, cumin, fennel seeds or curry powder.

One of the greatest options for those following a low-carb diet is rice or quinoa!

DIRECTIONS

  1. To assemble these foil packs of baked prawns: Set the oven temperature to 425ºF (220ºC). Cut two heavy-duty aluminium foil sheets measuring 14 by 12 inches (35 by 30 cm), and place each piece individually on the countertop. Mix the smoked paprika, onion powder, salt, pepper, and Italian seasoning (plus powdered stock, if using; see notes) in a small bowl to make the spice mixture.
  2. Place the prawns on a shallow platter and coat them completely with the spice mixture.
  3. Arrange the broccoli florets on one side of the shrimp and divide the shrimp into the centre of the aluminium foil.
  1. Add the garlic to the broccoli and prawns. Next, add the lemon juice, crushed red chilli pepper flakes (if using), and salt and pepper to taste. Evenly distribute the butter pieces into the shrimp foil packets, arranging them on top of the shrimp and broccoli.
  2. Fill each foil packet with a tablespoon of vegetable stock, then wrap the packets, crimp the edges, and wrap the ends. Avoid wrapping too tightly; allow some room inside for heat to escape.
  3. Transfer to a baking sheet and bake the shrimp foil packets for 15 minutes or until the shrimp are cooked through, with the sealed side facing up in the oven.
  1. Gently remove the foil packets containing the cooked prawns and broccoli, and then top with a wedge of lemon and some fresh parsley. Have fun!

BAKED SHRIMP TIPS

Instead of using aluminium foil to form the packets, you can use parchment paper, or you can line foil packets with parchment paper to provide a tight wrap.
Use half a teaspoon of powdered stock in the spice mixture and one tablespoon of water in each foil package if you don’t have any vegetable or chicken stock on hand.
A generous drop of olive oil can work wonders in place of butter.
