INGREDIENTS LIST FOR THE TILAPIA IN TOMATO BASIL SAUCE
Regarding the Tilapia:
Two tsp olive oil
1.5 pounds of fresh tilapia, divided into three or four fillets
Add pepper and salt.
Regarding the Basil Tomato Sauce:
Two tsp olive oil
Half a teaspoon of optionally crushed red pepper flakes
2 or 3 finely minced garlic cloves
Half a pint of cherry tomatoes, sliced
One little jalapeño, cut into 1/4 cup (60ml) veggie broth
Half a cup of fresh, freshly chopped basil
two tsp freshly squeezed lemon juice
half a teaspoon of freshly squeezed lemon juice
Both salt and freshly ground black pepper

DIRECTIONS
For the Basil Tomato Sauce:
- In a large sauté pan, heat the oil over medium heat. Add the garlic and crushed red pepper flakes, and sauté for one minute, or until the garlic becomes aromatic.
- Include the cherry tomatoes and jalapeño and simmer, turning periodically, for about 12 minutes, or until they are soft and scorching but still retain their form. Stir in the veggie stock and bring to a gentle simmer after adding it.
- Cook for two minutes after adding the basil, lemon zest, juice, and salt. Pour the sauce into a big bowl and reserve for a later time.
- Regarding the Tilapia:
- In the same pan, heat the oil over medium heat. Put salt and pepper on the fish’s two sides. After adding the tilapia fillets to the oil, fry them for about 3 minutes on each side, or until they are golden brown.
- Cover the fish with the tomato-basil sauce and immediately reheat. Serve everything at once, either with zucchini noodles, cauliflower rice, or extra chopped basil on the rice. Have fun! ❥️
