This recipe, which takes its cues from the Mediterranean, is a tasty, low-carb option that is satisfying and light.

This is a great, simple weekday dinner that can be prepared most of the way ahead if necessary. It’s also really effective for leftovers! If packing for lunch, just place a paper towel underneath the cucumber. In the absence of a spiralizer, you can grate it, julienne with a knife, or make ribbons with a vegetable peeler!

Makes two servings of cucumber noodles and keto tzatziki salmon.

THE PREPARATION

Tzatziki Sauce:

  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 1/2 tablespoon lemon juice
  • 2 teaspoon fresh garlic, minced
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon dried mint
  • salt, to taste

Salmon:

  • 1 medium cucumber, spiralized
  • 12 ounce salmon fillet
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 2 teaspoon fresh garlic, minced
  • salt and pepper, to taste

THE EXECUTION

1. Gather and prep all of your ingredients. Pre-heat oven to 400F.

2. Add all of the ingredients for the tzatziki sauce into a bowl.

3. Stir together well, then set aside in the refrigerator.

4. Place the salmon on top of a baking sheet covered with foil. Drizzle with olive oil, then cover the salmon with garlic and lemon zest. To taste, add salt and pepper for seasoning.

5. Depending on the thickness of the salmon, roast it for 16 to 20 minutes after wrapping it in foil, or until it is cooked through.

6. Plate the cucumber noodles, salmon, and tzatziki sauce as preferred once the salmon is cooked. Have fun!
