One bunch of cleaned, stem-removed, and cut collard greens
One tablespoon of vegetable oil
One sliced onion and two minced garlic cloves
Half a teaspoon of salt
half a teaspoon of recently cracked pepper
half a cup, or 125 milliliters minimal sodium vegetable stock with half a teaspoon of spicy sauce (we used Sriracha)
Optional: 1/2 teaspoon red chili pepper flakes

Collard greens have a wonderful flavor, but we decided to infuse these sauteed collard greens with onion, garlic, and hot sauce to give them an extra kick of heat – leave the hot sauce if you are not fond of it. This collard greens recipe ticks all the right boxes – vegan, vegetarian, gluten-free, low in carbs, and yet as flavourful as possible. Plus, it gets a hearty high-five from the keto crowd. Remember, eating healthier doesn’t have to mean sacrificing flavor or convenience.

RECIPES FOR COLLARD GREENS
Cooking collard greens is really simple: This simple and quick braised collard greens dish eliminates the need for prolonged boiling or steaming! Apply cool running water to the collard greens to rinse them. After chopping the leaves, remove the stems from each leaf and run the knife along the stalk on both sides.

Cook the onion and garlic in the pot until they are soft and aromatic. To the pot, add the seasonings, vegetable broth, and chopped collard greens. Simmer the collard greens until they are quite soft. Add the spicy sauce and stir, and presto—easy!

DIRECTIONS

  1. Preheat the oil in a deep skillet or Dutch oven over medium heat to create the sautéed collard greens with onion. When the onion is tender, add it and simmer it for three to four minutes. When the garlic is aromatic, add the salt, pepper, and garlic and simmer for 30 seconds.
  2. After chopping the collard greens, add them to the Dutch oven and simmer for three minutes, or until they wilt. After adding the vegetable broth, boil the mixture.
  3. After lowering the heat to a gentle simmer, cover the Dutch oven, and steam the collard greens for five minutes, or until they are soft. In order to decrease the sauce, stir in the hot sauce and heat for five minutes. If desired, top with red chili pepper flakes.
